Recipe - Blueberry Cottage Cheese Pancakes

Here is the recipe for cottage cheese pancakes with an option to make 'em blueberry:



1 cup flour
1/2 cup wheat germ
1/2 cup cottage cheese
2 1/2 teaspoons baking powder
1 tablespoon sugar
1 1/4 cups skim milk
2 tablespoons oil
optional: 1 cup blueberries

Sift together flour, baking powder and sugar. Add wheat germ. Combine
milk and oil, stir into the dry ingredients until moistened.
Stir in cottage cheese until mixture is slightly lumpy.

Drop batter by spoonfuls onto a greased pan. (For blueberry pancakes, drop a few washed blueberries onto the pancakes at this point) Cook until bubbles appear on upper surface, then turn and brown on the other side. Turn only once.

Serve with maple syrup. Makes 10 4-inch pancakes.
